**NEW** Organic Freshly Milled Unsifted Flour (FMF) Sourdough Boule (32 ounces)
🌾 I mill the organic hard white wheat berries, IMMEDIATELY assemble the dough and proof at room temperature for several hours, then place in the refrigerator for its cold proof/cold ferment, and baked first thing this morning.
Please know that the color (darker), flavor profile (more complex, nuttier, somewhat more sour), and texture (heartier, less fluffy, more substantial - not dry though!) of the Organic FMF Loaves and Artisan Boules are different from the Organic Loaves and Boules I have been baking for so long using organic store bought flour. Expecting the two different flours to perform in exactly the same way is just not going to happen
📣 Full disclosure because it's IMPORTANT to me to be transparent. I used my regular organic starter (6% organic flour) and the remainder (94%) of the flour used is freshly milled unsifted flour. I have yet to convert an additional starter to freshly milled.
👩🏼🍳As a baker, it is completely fine to combine store bought flour with freshly milled flour. I may end up doing so for some of my loaves in the future. However, you will always know if I do. It is right for a customer to believe that what they're purchasing is prepared with ONLY freshly milled flour when there is indeed a combination of both. Hence the above information shared about percentages. Negligible difference, but important...it is important to me, anyway.😊
