All of the Truly 100% Organic Artisan Sourdough I bake is baked with 100% organic ingredients baked fresh to order. Responsibly sourcing ingredients and paying more for them is foundational for the baked goods that I create, using local ingredients (dairy, eggs, honey, and produce) when possible. Each loaf is individually handcrafted, 100% organic sourdough, using wild yeast and long fermentation with no commercial yeast ever. The very popular 2.5 lb. sourdough sandwich loaf consists of organic flour, Redmond Real Salt, and Crystal Springs purified water. I also offer Organic Sourdough Artisan Boules, Honey Oat, Maple-Wheat, Cheddar Jalapeño, Cinnamon Swirl Raisin, Sweet Molasses Brown Bread, French Bread, Baguettes, Foccacia, Soft Pretzels, Ciabatta, and continue to add a variety of flavors to my menu. I have several faithful customers who appreciate the simplicity of the sourdough sandwich loaves I bake, as well as the more unusual varieties offered. There are many who have made a point to let me know (sometimes with happy tears) that they've found a way to enjoy bread again without joint pain, digestive distress, or brain fog. This feedback motivates me to continue to offer the very best to my customers. I hear again and again how those who thought they were gluten intolerant, are in fact, able to eat my organic sourdough baked goods without issue.

Most of my customers come to me for 100% organic sourdough, but are unaware that I also bake organic baked goods such as mini scones, muffins, coffeecakes, cookies, cupcakes, etc. For many years, I have sold baked goods unrelated to sourdough, but it has been the 100% organic sourdough that has brought the hundreds of customers I have today.

My name is Rachel Feehan, wife to Michael for 26 years, mother to Michael III, Marcus, and Mariah. Being in the kitchen is something that my mom encouraged me to do from a very, very young age. Over the last 30 years, I have logged in thousands of hours, gone through tens of thousands of pounds of flour, and created more recipes than I can keep track of. Rachel Mae Bakes officially came to be over 6 years ago.

Baking Sourdough has been something I have dabbled with on and off for the last 10 years. 5 years ago, I decided I wanted to consistently bake sourdough baked goods for my family. Upon further research, I realized that baking with organic ingredients wasn't just a nice idea, it was essential. And so was born Truly 100% Organic Sourdough.

To the best of my knowledge, Rachel Mae Bakes pioneered this unique combination of pairing sourdough with organic ingredients here in Knoxville, TN. I have since added 100% Freshly Milled Unsifted Flour Organic Sourdough baked goods and More to my baking Repertoire. Once again, Rachel Mae Bakes is offering items that you will not locally find anywhere else. Merging Organic, Sourdough, and 100% Freshly Milled Unsifted Flour milled in-house and used immediately is something unusual. I absolutely LOVE being able to bring baked goods to my customers that no one else is doing. Combining years of experience, organic ingredients, recipes I have developed, maximum freshness, and distinctive and delicious baked goods is my mission!

While the amazing sourdough products you find here really boosted this little bakery, I bake other organic baked goods BESIDES sourdough. I will ALWAYS differentiate between the baked goods that are long-fermented sourdough and those baked goods that are not.

At this time, you can pick up my freshly baked each day, Truly 100% Organic Sourdough Baked Goods at my Address, Sunago Coffee Co in Hardin Valley, HalleluYah Farms out in Rogersville, and sometimes at other locations depending on my bandwidth. I do not participate in Farmer’s Markets or Pop-up Markets as I just do not have the time. It has become commonplace to have daily sell-outs. I am humbled and grateful.❤️
