From using 100% organic unbleached wheat flour in my made-from-scratch sourdough starter and baked goods, to the organic vanilla, to now offering several baked goods prepared with 100% organic unsifted freshly milled flour, every detail is considered when I create and bake recipes for my customers.
I have found a wonderful company to ship and deliver the hundreds of pounds of organic flour and organic wheat berries I need every month to bake with. I also procure eggs from several friends committed to soy-free, corn-free, organic, free range practices. All dairy used is 100% organic, local when possible. The kefir I use in my biscuits and English Muffins is homemade using raw A2/A2 organic milk. Fair-trade, organic chocolate chips are my chocolate of choice. Any coloring in frostings or sprinkles used is 100% natural. The many natural sweeteners I use are 100% organic. If any recipe calls for oil of any kind, I use organic extra virgin olive oil, Chosen Foods avocado oil (yes, the brand is important), organic expeller pressed coconut oil, or organic palm fruit shortening. Crystal Springs purified water (our favorite water delivered for the last decade) is what I use for baking and boiling the bagels. Redmond Real Salt or Baja Gold mineral salt is purchased by the 25 lb. bag, and Maldon Sea Salt is my salt topper of choice for the crackers and chocolate chip cookies.
