Meet the newest member of Rachel Mae Bakes!!
I am excited to now offer Organic Baked Goods prepared with unsifted 100% Organic Freshly Milled flour. This means that I ground the organic wheat berries and immediately make the dough or batter with the freshly ground flour. Did you know that freshly milled flour begins to lose nutrients immediately after milling, and in 72 hours, 90% of the nutrients are lost? All flour has been freshly milled at one point in its life, but freshly milled flour is superior. Merging that with sourdough will elevate the nutrition! Read more about that here. Investing in my WonderMill has provided me with the opportunity to mill the flour and assemble it into a sourdough dough straight away. These mills are work horses, the customer service is incredible, and the price point is wonderful at appx. $300, give or take. Sue Becker, from Bread Beckers highly recommends this mill, and she is the OG of milling. I am happy to report that there are several individuals near and far who have purchased their own Wonder Mill after watching my journey with its use. I love being able to pass along what I am learning to so many other people!

I'm so thankful for my friend up in PA who has given me such encouragement to try this out, not only for my customers, but MOST importantly, for my family. My daughter has not been able to tolerate any of the baked goods I make even though they are 100% organic, long-fermented sourdough. My reason for investing in this incredible mill is for her. I am happy to report that she is thriving eating the Freshly Milled Unsifted Baked Goods. So far, we have made - parbaked pizza crusts, sandwich loaves, Artistan Boules, Browned Butter Chocolate Chip Cookies, pancakes, muffins, tortillas, and biscuits. Everything has been SO delicious!

I have no plans to discontinue using the wonderful organic flour I have successfully been using for my baked goods. Adding freshly milled unsifted organic flour is just that - an addition. Offering legitimate 100% freshly milled bread and perhaps other baked goods is the goal. The loaves I currently offer are fluffier and lighter in color as the bran and germ have been sifted out during the processing. Using freshly milled wheat will yield a heartier, darker colored, not quite as fluffy loaf that the majority of people are accustomed to. I thank you all for coming along on the journey with me. I know that people have been milling flour for millennia, and I am excited to have joined those who are so passionate about freshly milled wheat!
